光谱分析技术在水果品质与安全检测中的应用

摘要:
目的 对可见光/近红外光谱和拉曼光谱应用于我国水果品质与安全检测领域近年来的研究成果进行总结,并展望其未来发展方向。方法 文章在纵向梳理基于光谱分析技术检测水果品质与安全研究文献的基础上,深入分析了可见光/近红外光谱和拉曼光谱在我国水果品质(包括内部糖、酸、可溶性固形物、维生素C含量、内部霉变、坚实度及外部缺陷、损伤检测)与安全(农药残留)检测中的研究状况及存在的问题。结果 在我国,可见光/近红外光谱技术广泛应用于水果各品质指标检测研究,并取得了大量研究成果。拉曼光谱技术在我国水果品质分析领域获得成功应用较少,但在水果农药残留量检测方面比可见光/近红外光谱分析技术更具优势。结论 可见光/近红外光谱和拉曼光谱在水果品质与安全检测方面应用广泛,但存在较多问题。同时检测指标多、通用性强的便捷式检测系统和痕量检测是未来光谱分析技术在水果质量检测与分级方面的发展方向。

Abstract:
Purpose The paper summarizes the recent researches on visible light/near-infrared spectroscopy and Raman spectroscopy in the detection field of fruit quality and safety in China,and prospects the future development of visible light/near-infrared spectroscopy and Raman spectroscopy in the detection field of fruit quality and safety.Method Based on the longitudinal analysis of literature in the detection of fruit quality,the research progress of detection in fruit quality(including internal sugar,acid,soluble solids,Vc content,internal mildew,firmness and external defects,damage detection)and safety(pesticide residue)using visible light/near-infrared spectroscopy and Raman spectroscopy are deeply analyzed.Result In China,visible/near infrared spectroscopy has been widely used in the detection of fruit quality indicators,and a large number of research results have been achieved. Raman spectroscopy has less successful application in the field of fruit quality analysis,but it has more advantages than visible/near infrared spectroscopy in the detection of pesticide residues in fruits.Conclusion Visible/near infrared spectroscopy and Raman spectroscopy are widely used in fruit quality detection,but there are many problems. Convenient detection system with many detection indexes and strong versatility and trace detection are the direction of the future development of the spectral analysis technology in fruit quality detection and classification.
